Ingredients

  • 1.25 pounds fully cooked kielbasa (Polish sausage)pork, beef, or chicken; pat dry
  • 1 large red bell pepperseeded, sliced into strips
  • 1 medium yellow onioncut into wedges
  • 1 small zucchinicut into 3/4-inch half moons
  • 2 cups cauliflower floretsbite-size; optional but low carb friendly
  • 1.5 tablespoons avocado oilor olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepperfreshly ground
  • 0.25 teaspoon red pepper flakesoptional, to taste
  • 0.5 teaspoon dried oreganoor thyme
  • 1 teaspoon apple cider vinegaror lemon juice, for finishing
  • kosher saltto taste; add only if needed
  • Dijon mustard or sugar-free BBQ saucefor serving, optional

Instructions

  1. Preheat the air fryer to 390–400°F so the basket is hot and ready for instant sizzle.
  2. Pat kielbasa dry, then slice into 1/2-inch coins (or bias cuts for more surface area).
  3. Slice bell pepper into strips, onion into wedges, zucchini into 3/4-inch half moons; cut cauliflower into bite-size florets.
  4. In a large bowl, toss kielbasa (and vegetables, if using) with avocado oil, garlic powder, smoked paprika, black pepper, red pepper flakes, and oregano.
  5. Skip salt for now; many kielbasas are already well seasoned. You can add a pinch after cooking if needed.
  6. Spread sausage and vegetables in a single layer in the hot basket, leaving space for air circulation; work in batches if needed.
  7. Air fry for 8–10 minutes, then shake the basket to promote even browning.
  8. Continue cooking 6–8 minutes more until kielbasa is deeply golden with crisp edges and vegetables are tender with blistered spots. Add 2 extra minutes for extra crispy.
  9. Toss hot kielbasa and vegetables with apple cider vinegar or a squeeze of lemon; taste and add salt only if needed.
  10. Serve immediately with Dijon or sugar-free BBQ sauce for dipping. Pair with cauliflower rice, a green salad, or roasted low-carb veggies.

Notes

Cool leftovers completely, then refrigerate in an airtight container up to 4 days or freeze up to 2 months. Reheat in the air fryer at 360°F for 4–6 minutes to re-crisp, or warm in a hot skillet with a teaspoon of oil. Microwave as a last resort for softer edges.
