Ingredients

  • 4 bone-in pork chops1 to 1 1/4 inches thick; boneless OK but cooks faster
  • 1 tablespoon olive oilor avocado oil, for brushing
  • 1 1/2 teaspoons kosher saltor to taste
  • 1 teaspoon black pepperfreshly ground
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thymeor rosemary, crushed
  • 2 tablespoons finely crushed pork rindsor almond flour; optional for low-carb crust
  • 1 tablespoon unsalted butterfor dotting on hot chops; optional
  • 1/2 lemoncut into wedges, for serving; optional

Instructions

  1. Pat the pork chops completely dry with paper towels until no surface moisture remains.
  2. Brush both sides of the pork chops lightly with olive oil.
  3. In a small bowl, combine salt, pepper, smoked paprika, garlic powder, onion powder, and dried thyme (or rosemary).
  4. Coat the chops on all sides with the spice mix, pressing to help it adhere; for extra crunch, mix in crushed pork rinds or almond flour and press on lightly (optional).
  5. Preheat the air fryer to 400°F for at least 3 to 5 minutes so the basket is hot.
  6. Place chops in a single layer in the hot basket with space between them; cook in batches if needed.
  7. Air fry for 7 to 9 minutes, flip once, then continue 5 to 7 minutes more, depending on thickness and cut.
  8. Cook until the center registers 140–145°F on an instant-read thermometer.
  9. Transfer to a plate and rest 5 minutes; dot with butter and finish with a squeeze of lemon if desired.
  10. Serve warm with your favorite sides such as roasted green beans, mashed cauliflower, or a crisp salad.

Notes

Store leftover pork chops in an airtight container in the refrigerator for up to 4 days. Reheat in the air fryer at 350°F for 3 to 5 minutes to re-crisp the edges, or microwave with a light sprinkle of water in short bursts (softer crust). For longer storage, wrap each chop tightly and freeze up to 2 months; thaw overnight in the fridge and reheat in the air fryer to restore texture.
