Ingredients
- 1.5 pounds sirloin, ribeye, or New York strip — trimmed and cut into 1-inch cubes
- 1 tablespoon olive oil — just enough to lightly coat

- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/8 teaspoon cayenne pepper — optional, for heat

- 3 cloves garlic — minced
- 1 tablespoon fresh parsley or chives — finely chopped
- 1 lemon — cut into wedges, for serving
- flaky sea salt — for finishing, optional
Instructions
- Trim excess fat and cut steak into 1-inch cubes, then pat very dry with paper towels to promote browning.
- Toss cubes with olive oil, kosher salt, black pepper, smoked paprika, onion powder, and cayenne if using until evenly glossy and coated.
- Preheat the air fryer to 400°F for at least 3 minutes; a hot basket jump-starts the sear.
- Shake the empty basket to remove lingering moisture, then add steak in a single layer with a little space between pieces.
- Air fry 4 to 6 minutes at 400°F, shaking halfway; aim for browned, lightly crisp edges with a rosy center (about 5 minutes for medium-rare).
- While steak cooks, melt butter over low heat and stir in minced garlic until pale golden and fragrant, about 1 minute; remove from heat to avoid burning.
- Transfer hot steak bites to a bowl and immediately pour over warm garlic butter; toss to coat every surface.
- Sprinkle with chopped parsley or chives and a squeeze of lemon; rest 2 minutes so juices redistribute, then finish with flaky sea salt if desired.
- Serve immediately with extra lemon wedges; adjust salt and pepper to taste.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days; butter may solidify and look cloudy—this is normal. Reheat in the air fryer at 350°F for 2 to 3 minutes until just warmed and edges re-crisp. For a quick low-carb lunch, serve over arugula with a lemony vinaigrette and any pan juices. Microwave in 20-second bursts only until warm to avoid overcooking.
