Ingredients

  • 1.5 pounds sirloin, ribeye, or New York striptrimmed and cut into 1-inch cubes
  • 1 tablespoon olive oiljust enough to lightly coat
  • 1 teaspoon kosher saltmore to taste
  • 1/2 teaspoon black pepperfreshly ground
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon cayenne pepperoptional, for heat
  • 3 tablespoons unsalted butter
  • 3 cloves garlicminced
  • 1 tablespoon fresh parsley or chivesfinely chopped
  • 1 lemoncut into wedges, for serving
  • flaky sea saltfor finishing, optional

Instructions

  1. Trim excess fat and cut steak into 1-inch cubes, then pat very dry with paper towels to promote browning.
  2. Toss cubes with olive oil, kosher salt, black pepper, smoked paprika, onion powder, and cayenne if using until evenly glossy and coated.
  3. Preheat the air fryer to 400°F for at least 3 minutes; a hot basket jump-starts the sear.
  4. Shake the empty basket to remove lingering moisture, then add steak in a single layer with a little space between pieces.
  5. Air fry 4 to 6 minutes at 400°F, shaking halfway; aim for browned, lightly crisp edges with a rosy center (about 5 minutes for medium-rare).
  6. While steak cooks, melt butter over low heat and stir in minced garlic until pale golden and fragrant, about 1 minute; remove from heat to avoid burning.
  7. Transfer hot steak bites to a bowl and immediately pour over warm garlic butter; toss to coat every surface.
  8. Sprinkle with chopped parsley or chives and a squeeze of lemon; rest 2 minutes so juices redistribute, then finish with flaky sea salt if desired.
  9. Serve immediately with extra lemon wedges; adjust salt and pepper to taste.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days; butter may solidify and look cloudy—this is normal. Reheat in the air fryer at 350°F for 2 to 3 minutes until just warmed and edges re-crisp. For a quick low-carb lunch, serve over arugula with a lemony vinaigrette and any pan juices. Microwave in 20-second bursts only until warm to avoid overcooking.
