Ingredients

  • 8 pieces lamb rib or loin chops1 to 1.25 inches thick, about 2 to 2.5 lb total
  • 1 tablespoon olive oilor avocado oil
  • 1.25 teaspoons kosher saltor to taste
  • 1 teaspoon black peppercoarsely ground
  • 3 cloves garlicminced (or 1 teaspoon garlic powder)
  • 1 tablespoon fresh rosemaryfinely chopped (or 1.5 teaspoons dried)
  • 1 tablespoon fresh thyme leaveschopped (or 1.5 teaspoons dried)
  • 1 teaspoon lemon zestfinely grated
  • 1/4 teaspoon red pepper flakesoptional, for gentle heat
  • 2 teaspoons unsalted butteroptional, to finish
  • 1/2 lemon lemon juiceoptional, to squeeze over
  • 1/2 teaspoon ground cuminoptional, for earthy variation

Instructions

  1. Pat the lamb chops very dry on all sides with paper towels to promote browning.
  2. In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon zest, kosher salt, black pepper, and red pepper flakes (and cumin if using).
  3. Rub the mixture all over the lamb chops, coating evenly.
  4. Let the seasoned chops sit at room temperature for 15 to 20 minutes while you preheat.
  5. Preheat the air fryer to 400°F until hot.
  6. Arrange chops in a single layer, not touching. Cook for 6 to 8 minutes.
  7. Flip the chops and cook 4 to 6 minutes more, or until the surface is deep brown and an instant-read thermometer reads 130–135°F for medium rare (about 140°F for medium).
  8. Transfer to a plate and rest for 5 minutes to keep juices in the meat.
  9. Top with a small pat of butter or a squeeze of lemon juice for gloss and balance.
  10. Serve hot with low carb sides like cauliflower mash, roasted asparagus, or a simple arugula salad.
  11. Cook in batches if needed so the chops don’t touch; space ensures crisp edges and even cooking.
  12. If your air fryer has hot spots, rotate the basket halfway through for even browning.

Notes

Store leftovers in an airtight container with any resting juices for up to 3 days. Reheat in the air fryer at 320°F for 3–4 minutes until warmed through, or gently in a skillet over low heat with a little oil. For a cold option, slice and serve over a crunchy salad with a lemony dressing.
