Ingredients
- 24 cherry or grape tomatoes — washed and dried
- 8 oz fresh mozzarella pearls (ciliegine) — drained and patted dry
- 1 cup fresh basil leaves — small leaves whole; larger leaves folded
- 24 toothpicks or 6-inch bamboo skewers
- 3 tbsp extra virgin olive oil — fruity and peppery
- 1½ tbsp balsamic glaze or balsamic vinegar — use glaze for thicker cling; if using vinegar, start with less
- 1 tsp honey — optional, to balance tart tomatoes
- ½ tsp kosher salt — plus more to finish
- ¼ tsp freshly ground black pepper
- 1 pinch red pepper flakes — optional, for gentle heat
- 2 tbsp fresh basil — extra, torn, for garnish
- 2 tbsp toasted pine nuts or toasted sesame seeds — optional, for crunch
Instructions
- Wash and dry tomatoes. Drain mozzarella pearls and pat very dry until no longer glossy. Rinse and dry basil; set aside the best leaves.
- Thread a tomato, then a folded basil leaf, then a mozzarella pearl, and finish with another tomato on each pick for a tidy, stable stack.
- Continue assembling until all ingredients are used, arranging skewers on a platter as you go.
- Whisk olive oil, balsamic glaze (or a smaller amount of vinegar), honey (optional), salt, pepper, and red pepper flakes until glossy and lightly thickened. Taste and adjust.
- Drizzle the dressing in a thin zigzag over the skewers so it clings without puddling.
- Scatter torn basil over the top, finish with a final pinch of salt, and add toasted pine nuts or sesame seeds if using.
- Let mozzarella sit at room temperature 10–15 minutes before assembling for best flavor.
- Use a thicker balsamic glaze if transporting so it won’t drip; dress just before serving.
- Assemble up to 6 hours ahead without dressing; cover and refrigerate. Bring to room temperature 10–15 minutes, then drizzle and serve.
