Ingredients

- 1 cup cherry tomatoes — halved
- 1 cup cucumber — diced
- 1/2 large avocado — diced
- 1 tablespoon olive oil — extra-virgin, for drizzling
- 1 teaspoon everything bagel seasoning
- 1/4 teaspoon black pepper — freshly cracked
- 2 tablespoons chives or basil — chopped or torn
- 2 tablespoons hemp hearts
- 1 tablespoon chia seeds
- 1 tablespoon peanut butter or almond butter — for swirling
- 2 tablespoons pumpkin seeds — toasted
Instructions
- Place two serving bowls in the fridge for a few minutes so the cottage cheese stays extra thick and cool.
- Spoon cottage cheese into the chilled bowls and gently fold a few times; taste and add a pinch of flaky salt to brighten the flavor.
- Top with berries and/or diced peaches or pineapple; add banana slices if you like.
- Dust with cinnamon and drizzle lightly with honey or maple syrup.
- Sprinkle granola or toasted nuts and finish with fresh lemon zest for brightness.
- Top the cottage cheese with halved cherry tomatoes, diced cucumber, and avocado.
- Drizzle with olive oil, sprinkle everything bagel seasoning, and crack black pepper over the top.
- Add chopped chives or torn basil for a fresh, aromatic finish.
- For extra protein and texture, sprinkle hemp hearts, chia seeds, and pumpkin seeds, or swirl in nut butter.
