Ingredients
- 1.5 pounds cremini (baby bella) mushrooms — halved if small, quartered if large; white button or portobello slices also work
- 1.5 tablespoons olive oil — or avocado oil; just enough to lightly coat
- 3 cloves garlic — minced; or 1 teaspoon garlic powder
- 3/4 teaspoon kosher salt — plus more to taste
- 1/2 teaspoon black pepper — freshly ground
- 1/2 teaspoon smoked paprika — optional, for depth and color
- 1/2 teaspoon onion powder — optional
- 1 teaspoon fresh thyme or rosemary — finely chopped; optional
- 2 tablespoons fresh parsley — chopped
- 1 tablespoon lemon juice — or 1 to 2 teaspoons balsamic vinegar, to taste
- 1 tablespoon unsalted butter — optional; for steakhouse-style finish
- 2 tablespoons grated Parmesan — optional; if dairy fits your plan
Instructions
- Wipe mushrooms with a damp paper towel or give a very quick rinse and pat fully dry to encourage browning.
- Halve smaller mushrooms and quarter larger ones so pieces are similar in size.
- Preheat the air fryer to 380°F so the basket is hot before adding mushrooms.
- In a bowl, toss mushrooms with olive oil, minced garlic (or garlic powder), kosher salt, black pepper, smoked paprika, onion powder, and herbs until lightly and evenly coated.
- Spread mushrooms in a loose, even layer in the hot air fryer basket; cook in batches if needed to avoid crowding.
- Air fry at 380°F for 8 to 10 minutes, shaking the basket halfway, until edges are caramel-brown and centers are tender.
- Transfer hot mushrooms to a bowl and toss with parsley and lemon juice (or balsamic).
- For a steakhouse vibe, melt in the butter and add a final grind of pepper; sprinkle Parmesan if desired.
- Taste and adjust salt and acid to balance the savory flavors.
- Serve immediately as a side or spoon over steak, chicken, salmon, cauliflower rice, or zucchini noodles.
Notes
Cool completely, then store in an airtight container in the refrigerator for up to 4 days. Expect some liquid release; it’s normal. Reheat in the air fryer at 360°F for 3 to 4 minutes to re-crisp, or warm in a skillet over medium heat with a touch of oil to evaporate moisture. Microwave in a pinch, noting the texture will be softer. Great cold on salads or added to omelets, grain bowls, and lettuce wraps.
