Ingredients

  • 1.5 pounds beef sirloin (or flat iron or ribeye)cut into 1.25-inch cubes
  • 1 large red bell peppercut into 1.25-inch pieces
  • 1 medium zucchinicut into thick half-moons or chunks
  • 1 medium red onioncut into 1.25-inch wedges
  • 8-10 skewersmetal, or wooden soaked 20 minutes
  • 3 tablespoons avocado oilor olive oil
  • 2 tablespoons lemon juiceor red wine vinegar
  • 3 cloves garlicminced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher saltplus more to taste
  • 0.5 teaspoon black pepperfreshly ground
  • 0.25 teaspoon crushed red pepper flakesoptional, for heat
  • 0.5 teaspoon ground cuminoptional
  • 2 tablespoons fresh parsley or cilantrochopped
  • 1 lemoncut into wedges, for serving
  • 1 teaspoon avocado oilfor spritzing basket

Instructions

  1. Pat the beef cubes very dry with paper towels to promote good browning in the air fryer.
  2. If using wooden skewers, soak them in water for 20 minutes to prevent scorching.
  3. In a medium bowl, whisk together avocado oil, lemon juice, minced garlic, dried oregano, smoked paprika, kosher salt, black pepper, and optional red pepper flakes and cumin.
  4. Add beef cubes to the bowl and toss to coat. Add bell pepper, zucchini, and red onion and toss again so everything is lightly coated. Marinate 10 minutes (or up to 30 minutes refrigerated).
  5. Preheat the air fryer to 400°F for a hot start that sears on contact.
  6. Thread beef and vegetables onto skewers, alternating pieces and leaving a little space between items for airflow.
  7. Lightly spritz or brush the air fryer basket with avocado oil to help prevent sticking.
  8. Arrange kabobs in a single layer and cook for 8–10 minutes at 400°F, turning halfway, until edges are deeply browned and peppers are tender with a light char.
  9. For medium, aim for 135–140°F internal temperature; start checking at 7 minutes since air fryers vary.
  10. Transfer kabobs to a plate and rest 3–5 minutes, then shower with chopped parsley or cilantro and finish with a squeeze of fresh lemon.
  11. Serve hot with low carb sides like cucumber salad or cauliflower rice, and extra lemon wedges.

Notes

Store leftovers in an airtight container up to 4 days. Reheat in the air fryer at 350°F for 3–4 minutes or in a lightly oiled skillet over medium until warmed through. For meal prep, marinate beef up to 24 hours and keep vegetables chopped separately; skewer just before cooking. Avoid overcrowding the basket to keep edges caramelized, not steamed.
