Ingredients

  • 1 medium green cabbagetight, heavy head; Savoy or red optional
  • 2 tablespoons olive oilor avocado oil
  • 1 teaspoon kosher saltplus more to taste
  • 1/2 teaspoon black pepperfreshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakesoptional, for heat
  • 1/2 teaspoon onion powderoptional
  • 1 tablespoon lemon juiceor apple cider vinegar, to finish
  • 1/3 cup grated Parmesan cheeseadd during last minutes; optional
  • 2 tablespoons fresh herbsparsley, dill, or chives; optional
  • 1 teaspoon Dijon mustardoptional, for dipping sauce
  • 2 tablespoons mayonnaiseoptional, for Dijon-mayo dip

Instructions

  1. Remove any bruised outer leaves. Trim the stem just enough to create a flat base, then stand the cabbage upright.
  2. Slice the cabbage into 3/4- to 1-inch thick steaks, keeping some core attached so each piece holds together. Pat the cut surfaces dry.
  3. Preheat the air fryer to 390–400°F for at least 3 minutes so the basket is hot.
  4. Brush both sides of each cabbage steak with a thin coat of oil—do not soak.
  5. Season both sides with kosher salt, black pepper, garlic powder, and smoked paprika. Add red pepper flakes and onion powder if using.
  6. Arrange steaks in a single layer in the hot basket (cook in batches if needed). Air fry at 390–400°F for about 8 minutes until the bottoms are golden.
  7. Flip carefully and continue cooking 6–10 minutes more, until centers are tender when pierced and edges are deeply caramelized.
  8. If using Parmesan, sprinkle it on during the last 2–3 minutes so it melts and browns without burning.
  9. Immediately after cooking, drizzle with lemon juice or apple cider vinegar to brighten.
  10. Top with chopped parsley, dill, or chives if desired. Taste and adjust salt.
  11. Stir Dijon into the mayonnaise for a quick tangy dip to serve alongside.
  12. Serve hot while edges are crisp and centers are tender. Cook remaining batches the same way.

Notes

Cool completely and store in an airtight container up to 4 days. Reheat in the air fryer at 360°F for 3–5 minutes, or in a hot skillet with a teaspoon of oil 2–3 minutes per side. Microwave softens more but works in a pinch. Great chopped into salads, scrambled eggs, or low carb bowls with sausage or chicken.
