Ingredients
- 2 cups plain Greek yogurt — full-fat or 2% for creamiest texture

Instructions
- In a bowl, whisk Greek yogurt with vanilla, honey or maple (to taste), and a tiny pinch of salt until silky and slightly loosened.
- Rinse berries and pat very dry; slice large strawberries thin so layers stay neat.
- Toss berries with lemon zest and a teaspoon of lemon juice; add a teaspoon of sugar or a few drops of stevia if desired.
- If using nuts or seeds, toast in a dry skillet over medium heat until fragrant and a shade darker, 2 to 4 minutes. Cool.
- For a thicker spoon feel, stir chia seeds into the yogurt and let sit 5 to 10 minutes.
- Spoon a base of yogurt into glasses or bowls. Add a layer of berries, then a sprinkle of granola or toasted nuts/seeds.
- Repeat layers to the top, finishing with berries so the colors shine. For low-carb, favor yogurt and berries with nuts/seeds and light sweetener.
- Dust lightly with cinnamon or cardamom, add coconut flakes as a barrier if storing, and drizzle a little honey if you like.
- Serve immediately for maximum crunch, or chill 10 minutes for an extra-cold, lightly set parfait.
- For dessert vibes, mash a handful of berries with a pinch of sugar and a squeeze of lemon into a quick compote and ripple through the yogurt before layering.
Notes
