Ingredients

  • 1 lb flank steak or sirloinvery thinly sliced against the grain
  • 2 tbsp low-sodium tamari or soy saucetamari for gluten-free
  • 1 tbsp oyster sauceuse sugar-free if preferred, or see notes for swap
  • 1 tsp toasted sesame oil
  • 2 cloves garlicfinely grated
  • 1 tbsp fresh gingerfinely grated
  • 1/4 tsp baking sodaoptional, for velvety tender texture
  • 1 lb broccoli floretsstems peeled and sliced thin; bite-size pieces
  • 2 tbsp neutral high-heat oilavocado or light olive oil, divided
  • 1/2 cup beef or chicken brothplus extra splash for steaming broccoli
  • 2 tbsp low-sodium tamari or soy sauce
  • 1 tsp granulated keto sweeteneror 1 tsp honey if not strict low carb
  • 1/8 tsp xanthan gumoptional; or reduce sauce to thicken
  • 1/2 tsp toasted sesame oilfor finishing
  • 1/4 tsp black pepperfreshly ground, to taste
  • 1 cup sliced mushrooms, snap peas, or baby bok choyoptional, low carb-friendly
  • 2 green onionsthinly sliced, for garnish
  • 1 tsp sesame seedstoasted, for garnish
  • 1/4 tsp red pepper flakes or chili oiloptional, for heat

Instructions

  1. Freeze beef 15 minutes to firm, then slice very thinly against the grain.
  2. In a bowl, combine tamari, oyster sauce, sesame oil, garlic, ginger, and baking soda (if using).
  3. Toss beef with the marinade and let stand 10–15 minutes while you prep vegetables.
  4. Heat a large skillet or wok over high heat until just smoking. Add 1 tablespoon oil and swirl.
  5. Add broccoli and a splash of broth; stir, cover 1 minute, then uncover and cook until bright green and crisp-tender. Transfer to a plate.
  6. Add remaining 1 tablespoon oil. Sear beef in a single layer in batches, 45–90 seconds per side, just until pink fades. Do not crowd.
  7. Reduce heat to medium. Add broth, tamari, sweetener, and any beef juices; bring to a simmer.
  8. If using xanthan gum, sprinkle a tiny pinch evenly while whisking; simmer 1–2 minutes until glossy and slightly thick. Or simmer to reduce without thickener.
  9. Return broccoli (and any optional veggies) to the pan; toss until everything is coated and heated through.
  10. Drizzle with sesame oil and season with black pepper; add chili flakes or chili oil if desired. Garnish with green onions and sesame seeds.
  11. Serve immediately over cauliflower rice or sautéed shredded cabbage for a low carb dinner.

Notes

Store in an airtight container up to 4 days. Reheat in a skillet over medium heat with a splash of broth to loosen the glaze, or microwave 60–90 seconds, stirring halfway. For best meal-prep texture, store beef and broccoli separately and combine when reheating. For oyster sauce–free: use tamari plus a splash of fish sauce and a touch more sweetener; thicken with a pinch of xanthan gum or by reducing.
