Ingredients
- 5 cups seedless watermelon — chilled, cubed
- 1 cup fresh mint leaves — loosely packed; leaves only
- 1/4 teaspoon fine sea salt — a small pinch enhances sweetness
- 1/3 cup fresh lime juice — from about 3–4 limes
- 2 cups ice — preferably crushed
- 10–15 drops liquid stevia or monk fruit — optional; to taste. Or 1–2 tsp allulose
- 3 cups sparkling water — cold, unflavored seltzer
- 1 cucumber — optional; a few slices, muddled in glass
- 4 sprigs fresh mint — for garnish; plus extra leaves torn
- 4 thin watermelon wedges — for garnish
- 1 lime — cut into wheels for garnish
Instructions
- Refrigerate watermelon and sparkling water until very cold for a lively, crisp cooler.
- Add chilled watermelon, mint leaves, lime juice, sea salt, and 1 cup of the crushed ice to a blender.
- If the melon isn’t very sweet, add a few drops of stevia or monk fruit (or a little allulose) to taste.
- Blend just until smooth and rosy with fine green mint flecks; avoid overblending to prevent bitterness and foam.
- Taste and adjust lime or sweetener. For a silkier sip, strain through a fine sieve into a pitcher; otherwise keep the slushy texture.
- Right before serving, gently stir in cold sparkling water; the color will lighten as bubbles fold through.
- Fill tall glasses with fresh ice; optionally muddle a couple of cucumber slices in the bottom for a cool aroma.
- Tilt the pitcher and divide the cooler among glasses, letting it cascade over the ice.
- Top with a few torn mint leaves and add a thin watermelon wedge or lime wheel to each glass.
- Enjoy right away while the fizz is lively and the drink is icy-cold.
- A tiny pinch of salt brightens sweetness and makes mint pop without extra sweetener.
- Always add sparkling water after blending to preserve carbonation.
Notes
Make-ahead: Blend the base (watermelon, mint, salt, lime, optional sweetener) and refrigerate up to 2 days without the sparkling water. Stir before using, then add cold seltzer just before serving. Freeze-for-later: Pour the base into ice cube trays; freeze up to 2 months. For instant coolers, add cubes to a glass and top with seltzer. Store garnishes separately and add fresh.
