Ingredients

  • 1.5 pounds Brussels sproutstrimmed, halved (quarter any very large ones)
  • 2 tablespoons Olive oilor avocado oil, enough to lightly coat
  • 1 teaspoon Kosher saltplus more to finish
  • 0.5 teaspoon Black pepperfreshly ground
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Smoked paprikaor chili powder, optional
  • 0.5 medium Lemoncut into wedges, for squeezing
  • 0.25 cup Finely grated Parmesanoptional, to finish
  • 0.25 teaspoon Crushed red pepper flakesoptional, to taste
  • 4 slices Baconcooked and chopped, optional

Instructions

  1. Trim dry stem ends, peel any wilted outer leaves, then halve the Brussels sprouts lengthwise; quarter any very large ones for even cooking.
  2. Pat the sprouts very dry with a clean towel—dry leaves crisp, damp leaves steam.
  3. In a large bowl, toss sprouts with olive oil until lightly glossy, then sprinkle on salt, pepper, garlic powder, onion powder, and smoked paprika; rub seasoning onto the cut sides.
  4. Preheat the air fryer to 390–400°F for 3–5 minutes so the basket is hot.
  5. Arrange sprouts cut side down in a single layer in the hot basket (cook in batches if needed) and air fry at 390–400°F for 7–9 minutes.
  6. Shake or stir, then continue cooking 4–6 minutes more until edges are deeply golden and centers are fork-tender; bump to 400°F for the last 2 minutes for extra char if desired.
  7. Immediately toss with a squeeze of fresh lemon and taste; add a pinch more salt if needed.
  8. Finish with Parmesan, a pinch of red pepper flakes, and/or chopped cooked bacon just before serving.
  9. Serve hot while the edges are crisp and frilly for the best texture.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 360°F for 3–4 minutes or on a hot sheet pan until re-crisped and warmed through. Refresh with a squeeze of lemon and a pinch of salt before serving.
