Ingredients

  • 4 fillets cod fillets6 to 8 ounces each, fresh or thawed and well dried
  • 1 tablespoon olive oilor avocado oil; plus more for basket
  • 1 lemonzested; cut into wedges for serving
  • 1 teaspoon kosher salt
  • 1 teaspoon paprikasweet or smoked
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepperfreshly ground
  • 1 tablespoon fresh parsleychopped, for garnish (optional)
  • 2 teaspoons unsalted butterdivide into small pats to melt on fish (optional)
  • 1 teaspoon oil sprayor air-fryer-safe perforated parchment liner

Instructions

  1. Pat cod fillets very dry on all sides with paper towels until little moisture remains.
  2. In a small bowl, combine salt, paprika, garlic powder, onion powder, and black pepper. Zest the lemon directly into the bowl and stir to combine.
  3. Drizzle or mist the cod with olive oil and rub to lightly coat so the seasoning adheres.
  4. Sprinkle the lemony spice blend over both sides of each fillet, coating evenly.
  5. Preheat the air fryer to 390–400°F so the basket is hot. Lightly oil the basket or add a perforated parchment liner.
  6. Place seasoned cod in the basket in a single layer with space between pieces to allow air circulation.
  7. Air fry for 7–10 minutes at 390–400°F, depending on thickness, until the cod is opaque and flakes easily with a fork.
  8. For extra richness, add a small pat of butter to each fillet during the last minute to melt over the spices.
  9. Let the cod rest 2 minutes, then finish with a squeeze of lemon and a sprinkle of chopped parsley.
  10. If using a thermometer, confirm 145°F at the thickest part; edges should be just firm and centers flake into glossy pieces.
  11. Plate with low-carb sides like roasted asparagus, slaw, or cauliflower mash and serve hot.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 325°F for 3–5 minutes until just warmed and the edges re-crisp. For freezing, wrap tightly and freeze up to 1 month; thaw overnight in the fridge before reheating. Add a fresh squeeze of lemon after reheating to brighten flavor. Avoid overcooking during reheating to keep the fish tender.
