Ingredients
- 4 fillets cod fillets — 6 to 8 ounces each, fresh or thawed and well dried
- 1 tablespoon olive oil — or avocado oil; plus more for basket
- 1 lemon — zested; cut into wedges for serving
- 1 teaspoon kosher salt
- 1 teaspoon paprika — sweet or smoked
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper — freshly ground
- 1 tablespoon fresh parsley — chopped, for garnish (optional)
- 2 teaspoons unsalted butter — divide into small pats to melt on fish (optional)
- 1 teaspoon oil spray — or air-fryer-safe perforated parchment liner
Instructions
- Pat cod fillets very dry on all sides with paper towels until little moisture remains.
- In a small bowl, combine salt, paprika, garlic powder, onion powder, and black pepper. Zest the lemon directly into the bowl and stir to combine.
- Drizzle or mist the cod with olive oil and rub to lightly coat so the seasoning adheres.
- Sprinkle the lemony spice blend over both sides of each fillet, coating evenly.
- Preheat the air fryer to 390–400°F so the basket is hot. Lightly oil the basket or add a perforated parchment liner.
- Place seasoned cod in the basket in a single layer with space between pieces to allow air circulation.
- Air fry for 7–10 minutes at 390–400°F, depending on thickness, until the cod is opaque and flakes easily with a fork.
- For extra richness, add a small pat of butter to each fillet during the last minute to melt over the spices.
- Let the cod rest 2 minutes, then finish with a squeeze of lemon and a sprinkle of chopped parsley.
- If using a thermometer, confirm 145°F at the thickest part; edges should be just firm and centers flake into glossy pieces.
- Plate with low-carb sides like roasted asparagus, slaw, or cauliflower mash and serve hot.
Notes
Store cooled leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 325°F for 3–5 minutes until just warmed and the edges re-crisp. For freezing, wrap tightly and freeze up to 1 month; thaw overnight in the fridge before reheating. Add a fresh squeeze of lemon after reheating to brighten flavor. Avoid overcooking during reheating to keep the fish tender.
