Ingredients

  • 1.5 pounds boneless skinless chicken thighstrimmed and cut into 1.5-inch pieces
  • 0.5 teaspoon kosher saltto season chicken
  • 0.25 teaspoon black pepper
  • 1 tablespoon soy sauce or tamaritamari for gluten free
  • 1 teaspoon neutral oilplus spray for basket
  • avocado oil sprayfor air fryer basket and tops
  • 4 cloves garlicminced or finely grated
  • 1 teaspoon fresh gingerfinely grated
  • 1 teaspoon neutral oilfor the skillet
  • 3 tablespoons soy sauce or tamari
  • 1.5 tablespoons rice vinegar
  • 3 tablespoons low carb honey alternativeor 2 Tbsp allulose + 1 Tbsp real honey
  • 0.13 teaspoon xanthan gumoptional, a small pinch to thicken
  • 0.5 teaspoon toasted sesame oilfinish off heat
  • 1 tablespoon toasted sesame seeds
  • 2 green onionsthinly sliced
  • cauliflower rice or zucchini noodlesfor serving, optional

Instructions

  1. Trim boneless skinless chicken thighs and cut into 1.5-inch pieces; pat very dry.
  2. Toss chicken with kosher salt, black pepper, 1 tablespoon soy sauce or tamari, and 1 teaspoon neutral oil. Let sit while the air fryer heats.
  3. Preheat air fryer to 390°F. Lightly spray the basket with avocado oil spray.
  4. Arrange chicken in a single layer, spray tops lightly, and air fry 8 to 10 minutes, shaking once, until edges are browned and centers reach 165°F. Add 2 to 3 minutes if needed.
  5. While chicken cooks, heat 1 teaspoon neutral oil in a small skillet over medium. Add garlic and ginger; stir until fragrant, about 30 seconds.
  6. Add soy sauce or tamari, rice vinegar, and low carb honey alternative (or allulose + honey). Simmer gently until slightly darkened and glossy, 1 to 2 minutes.
  7. For a thicker glaze, whisk in a tiny pinch of xanthan gum (about 1/8 teaspoon), sprinkling slowly and whisking constantly, or reduce a minute longer without thickeners.
  8. Transfer hot chicken to the skillet and toss 30 to 60 seconds until the glaze clings and looks lacquered, not soupy.
  9. Remove from heat and stir in toasted sesame oil. Garnish with sesame seeds and green onions.
  10. Serve immediately over cauliflower rice or with zucchini noodles, if desired. Let rest 2 minutes to help the glaze set.

Notes

Cool completely and refrigerate in an airtight container up to 4 days, or freeze up to 2 months. Reheat in a skillet over medium with a splash of water until hot and glossy, or microwave 45 to 60 seconds per portion, stirring once; add a teaspoon of water if the glaze seems tight.
