Ingredients
- 1.5 pounds boneless skinless chicken thighs — trimmed and cut into 1.5-inch pieces
- 0.5 teaspoon kosher salt — to season chicken
- 0.25 teaspoon black pepper
- 1 tablespoon soy sauce or tamari — tamari for gluten free
- 1 teaspoon neutral oil — plus spray for basket
- avocado oil spray — for air fryer basket and tops
- 4 cloves garlic — minced or finely grated
- 1 teaspoon fresh ginger — finely grated
- 1 teaspoon neutral oil — for the skillet
- 3 tablespoons soy sauce or tamari
- 1.5 tablespoons rice vinegar
- 3 tablespoons low carb honey alternative — or 2 Tbsp allulose + 1 Tbsp real honey
- 0.13 teaspoon xanthan gum — optional, a small pinch to thicken
- 0.5 teaspoon toasted sesame oil — finish off heat
- 1 tablespoon toasted sesame seeds
- 2 green onions — thinly sliced
- cauliflower rice or zucchini noodles — for serving, optional
Instructions
- Trim boneless skinless chicken thighs and cut into 1.5-inch pieces; pat very dry.
- Toss chicken with kosher salt, black pepper, 1 tablespoon soy sauce or tamari, and 1 teaspoon neutral oil. Let sit while the air fryer heats.
- Preheat air fryer to 390°F. Lightly spray the basket with avocado oil spray.
- Arrange chicken in a single layer, spray tops lightly, and air fry 8 to 10 minutes, shaking once, until edges are browned and centers reach 165°F. Add 2 to 3 minutes if needed.
- While chicken cooks, heat 1 teaspoon neutral oil in a small skillet over medium. Add garlic and ginger; stir until fragrant, about 30 seconds.
- Add soy sauce or tamari, rice vinegar, and low carb honey alternative (or allulose + honey). Simmer gently until slightly darkened and glossy, 1 to 2 minutes.
- For a thicker glaze, whisk in a tiny pinch of xanthan gum (about 1/8 teaspoon), sprinkling slowly and whisking constantly, or reduce a minute longer without thickeners.
- Transfer hot chicken to the skillet and toss 30 to 60 seconds until the glaze clings and looks lacquered, not soupy.
- Remove from heat and stir in toasted sesame oil. Garnish with sesame seeds and green onions.
- Serve immediately over cauliflower rice or with zucchini noodles, if desired. Let rest 2 minutes to help the glaze set.
Notes
Cool completely and refrigerate in an airtight container up to 4 days, or freeze up to 2 months. Reheat in a skillet over medium with a splash of water until hot and glossy, or microwave 45 to 60 seconds per portion, stirring once; add a teaspoon of water if the glaze seems tight.
