Ingredients
- 1 lb ground beef (85–90% lean)
- 1 lb ground pork
- 1/3 cup almond flour — or finely crushed pork rinds
- 1/3 cup finely grated Parmesan — or Pecorino
- 1 large egg
- 2 tbsp milk or unsweetened almond milk
- 3 cloves garlic, minced
- 1/4 cup yellow onion, finely grated or minced
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes — optional
- 1 tsp kosher salt — plus more to taste
- 1/2 tsp black pepper — freshly ground
- 1 tbsp olive oil — for spraying or brushing basket
- 1 1/2 cups low carb marinara sauce — warmed, optional for tossing
- extra grated Parmesan and chopped parsley — for garnish
Instructions
- Preheat the air fryer to 390°F (200°C) for 5 minutes so the basket is hot for better browning.
- In a large bowl combine almond flour, Parmesan, garlic, grated onion, parsley, oregano, basil, red pepper flakes, salt, and black pepper.
- Add ground beef, ground pork, egg, and milk; gently fold with your hands just until evenly combined—do not overmix.
- If the mixture feels warm or loose, chill for 10 minutes to firm up and help meatballs hold shape.
- With damp hands, roll into golf ball–sized meatballs (about 1 1/2 inches; 24–28 pieces) and place on a parchment-lined tray.
- Lightly spray or brush the preheated air fryer basket with olive oil or use a perforated parchment liner.
- Arrange meatballs in a single layer with space between. Air fry at 390°F for 6 minutes.
- Shake the basket or turn meatballs with tongs; continue cooking 5–6 minutes more until browned and an instant-read thermometer reads 160–165°F in the center.
- Transfer to a plate and rest 3–5 minutes to let juices redistribute.
- Toss meatballs in warm low carb marinara for 1–2 minutes or serve plain with extra Parmesan and parsley.
- Repeat with remaining meatballs, cooking in batches to avoid overcrowding.
Notes
Cool completely, then refrigerate in an airtight container up to 4 days or freeze on a sheet pan until firm and transfer to a bag for up to 3 months. Reheat in the air fryer at 350°F for 4–6 minutes, or gently simmer in marinara until warmed through. For best texture, avoid microwaving for long bursts; cover and use short intervals.
