Ingredients

  • 1 lb ground beef (85–90% lean)
  • 1 lb ground pork
  • 1/3 cup almond flouror finely crushed pork rinds
  • 1/3 cup finely grated Parmesanor Pecorino
  • 1 large egg
  • 2 tbsp milk or unsweetened almond milk
  • 3 cloves garlic, minced
  • 1/4 cup yellow onion, finely grated or minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakesoptional
  • 1 tsp kosher saltplus more to taste
  • 1/2 tsp black pepperfreshly ground
  • 1 tbsp olive oilfor spraying or brushing basket
  • 1 1/2 cups low carb marinara saucewarmed, optional for tossing
  • extra grated Parmesan and chopped parsleyfor garnish

Instructions

  1. Preheat the air fryer to 390°F (200°C) for 5 minutes so the basket is hot for better browning.
  2. In a large bowl combine almond flour, Parmesan, garlic, grated onion, parsley, oregano, basil, red pepper flakes, salt, and black pepper.
  3. Add ground beef, ground pork, egg, and milk; gently fold with your hands just until evenly combined—do not overmix.
  4. If the mixture feels warm or loose, chill for 10 minutes to firm up and help meatballs hold shape.
  5. With damp hands, roll into golf ball–sized meatballs (about 1 1/2 inches; 24–28 pieces) and place on a parchment-lined tray.
  6. Lightly spray or brush the preheated air fryer basket with olive oil or use a perforated parchment liner.
  7. Arrange meatballs in a single layer with space between. Air fry at 390°F for 6 minutes.
  8. Shake the basket or turn meatballs with tongs; continue cooking 5–6 minutes more until browned and an instant-read thermometer reads 160–165°F in the center.
  9. Transfer to a plate and rest 3–5 minutes to let juices redistribute.
  10. Toss meatballs in warm low carb marinara for 1–2 minutes or serve plain with extra Parmesan and parsley.
  11. Repeat with remaining meatballs, cooking in batches to avoid overcrowding.

Notes

Cool completely, then refrigerate in an airtight container up to 4 days or freeze on a sheet pan until firm and transfer to a bag for up to 3 months. Reheat in the air fryer at 350°F for 4–6 minutes, or gently simmer in marinara until warmed through. For best texture, avoid microwaving for long bursts; cover and use short intervals.
