Ingredients
- 1 pound ground turkey (93% lean)
- 1/2 small onion, finely grated — lightly squeezed to remove excess moisture
- 2 cloves garlic, minced — or 1 tsp garlic powder
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 large egg — lightly beaten
- 2 tablespoons almond flour — or crushed pork rinds; optional for structure
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt — plus more to taste
- 1/2 teaspoon black pepper — freshly ground
- avocado or olive oil spray — for basket and patties
- 8 leaves butter lettuce or iceberg — for wraps
- 1 avocado — sliced
- 1 tomato — sliced
- 1/4 red onion — thinly sliced
- 4 slices cheese (optional) — cheddar, provolone, or pepper jack
- low carb sauce — chipotle mayo or sugar-free BBQ
Instructions
- In a bowl, gently combine ground turkey, grated onion, garlic, Worcestershire, Dijon, egg, smoked paprika, salt, and pepper with a fork until just mixed.
- If the mixture feels very loose, sprinkle in almond flour (or crushed pork rinds) 1–2 tablespoons until cohesive but still soft.
- Divide into 4 equal patties about 1/2 inch thick and press a shallow dimple in the center of each. Lightly mist both sides with oil spray.
- Preheat the air fryer to 375°F for 3–5 minutes and lightly spray the basket.
- Place patties in a single layer with space around them and cook for about 6 minutes.
- Flip and cook 5–7 minutes more, until the internal temperature reaches 165°F.
- If adding cheese, place a slice on each patty during the last minute to melt.
- Transfer burgers to a plate and rest 2–3 minutes to keep juices in the patties.
- Serve in lettuce leaves with avocado, tomato, red onion, and your favorite low carb sauce.
- For best browning, avoid overcrowding the basket and cook in batches if needed; flip once at the halfway mark.
Notes
Cool completely, then refrigerate cooked patties in an airtight container up to 4 days or freeze up to 3 months (separate with parchment). Reheat in the air fryer at 350°F for 3–5 minutes, in a covered skillet with a splash of water, or microwave 45–60 seconds. Thaw frozen patties overnight or add a few extra minutes in the air fryer.
