Ingredients

  • 1 pound ground turkey (93% lean)
  • 1/2 small onion, finely gratedlightly squeezed to remove excess moisture
  • 2 cloves garlic, mincedor 1 tsp garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 large egglightly beaten
  • 2 tablespoons almond flouror crushed pork rinds; optional for structure
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher saltplus more to taste
  • 1/2 teaspoon black pepperfreshly ground
  • avocado or olive oil sprayfor basket and patties
  • 8 leaves butter lettuce or icebergfor wraps
  • 1 avocadosliced
  • 1 tomatosliced
  • 1/4 red onionthinly sliced
  • 4 slices cheese (optional)cheddar, provolone, or pepper jack
  • low carb saucechipotle mayo or sugar-free BBQ

Instructions

  1. In a bowl, gently combine ground turkey, grated onion, garlic, Worcestershire, Dijon, egg, smoked paprika, salt, and pepper with a fork until just mixed.
  2. If the mixture feels very loose, sprinkle in almond flour (or crushed pork rinds) 1–2 tablespoons until cohesive but still soft.
  3. Divide into 4 equal patties about 1/2 inch thick and press a shallow dimple in the center of each. Lightly mist both sides with oil spray.
  4. Preheat the air fryer to 375°F for 3–5 minutes and lightly spray the basket.
  5. Place patties in a single layer with space around them and cook for about 6 minutes.
  6. Flip and cook 5–7 minutes more, until the internal temperature reaches 165°F.
  7. If adding cheese, place a slice on each patty during the last minute to melt.
  8. Transfer burgers to a plate and rest 2–3 minutes to keep juices in the patties.
  9. Serve in lettuce leaves with avocado, tomato, red onion, and your favorite low carb sauce.
  10. For best browning, avoid overcrowding the basket and cook in batches if needed; flip once at the halfway mark.

Notes

Cool completely, then refrigerate cooked patties in an airtight container up to 4 days or freeze up to 3 months (separate with parchment). Reheat in the air fryer at 350°F for 3–5 minutes, in a covered skillet with a splash of water, or microwave 45–60 seconds. Thaw frozen patties overnight or add a few extra minutes in the air fryer.
