Ingredients

  • 1 English cucumber cucumberthinly sliced; peel on if tender
  • 1 limezested (about 1/2 the peel) and juiced
  • 6 cups cold filtered water
  • 2 sprigs fresh mintoptional; clap to release aroma
  • 2 cups icefor serving; large cubes preferred
  • 1 pinch fine sea saltenhances lime; especially post-workout
  • 2-3 drops liquid stevia or monk fruitoptional, to taste
  • 4-6 slices fresh gingervery thin; optional aromatic twist
  • 1-2 strips lime zestoptional; avoid white pith
  • 4-6 ribbons cucumber peeloptional; for extra aroma and look
  • 2 cups chilled sparkling wateroptional; top glasses just before serving

Instructions

  1. Rinse the cucumber and lime thoroughly; pat dry. Roll the lime on the counter to release more juice.
  2. Slice the cucumber into very thin rounds; add a few long ribbons with a peeler if desired.
  3. Finely zest about half the lime directly into a pitcher, avoiding the bitter white pith, then juice the lime and add to the pitcher, straining out seeds.
  4. Clap 2 sprigs of mint between your palms and add to the pitcher with the cucumber slices.
  5. Pour in the cold filtered water and gently stir to combine.
  6. Let the water rest 10–15 minutes for a light flavor or about 30 minutes for a fuller infusion. For very bold flavor, chill up to 2 hours, then remove any lime slices or excessive zest to prevent bitterness.
  7. Add a pinch of sea salt and 2–3 drops of stevia or monk fruit to taste; stir gently. Add ginger slices, extra lime zest, or cucumber peel ribbons if desired.
  8. Fill glasses with ice. Strain out lime solids if infusing longer than 2 hours.
  9. Pour the infused water over ice. If using, top each glass with a splash of chilled sparkling water just before serving.
  10. Taste and adjust with more lime, mint, or salt if needed; serve immediately, crisp and cold.

Notes

Store covered in the refrigerator for up to 24 hours for best flavor. For longer storage, strain out lime and mint after 2 hours to avoid bitterness; keep cucumber slices in up to 24 hours. Prep ahead by keeping sliced cucumber and mint in one container and lime juice/zest in another; combine with cold water about 1 hour before serving. Refresh with new ice as you refill glasses.
