Ingredients
- 6 tea bags black tea (or green/herbal) — use 6–8 bags for a strong base
- 4 cups water — just-off-the-boil for steeping
- 3 cups cold water — to dilute the concentrate
- 2 tablespoons liquid keto sweetener — monk fruit, allulose, or liquid stevia; to taste
- 1 lemon — thick slices for the pitcher, plus extra wedges for serving
- 2 cups ice — plus more for serving; large cubes preferred
- 6 sprigs fresh mint — optional, for aroma
- 2 tea bags berry herbal tea — such as raspberry or mixed berry
- 1 cup water — hot, for steeping berry tea
- 1 teaspoon liquid keto sweetener — sweeten to taste
- 1 tablespoon lemon juice — optional, to brighten the berry swirl
- 1 teaspoon vanilla extract — optional, for softness
- 6 slices cucumber — optional, for spa vibes
- 1 lemon wheel or mint sprig — for garnish
Instructions
- Bring 4 cups of fresh water to a boil, then let it settle 30–60 seconds so it is just-off-the-boil.
- Add the tea bags to a heatproof pitcher, pour the hot water over, and steep 5 minutes for black tea, 3 minutes for green, or longer for herbal.
- In a small bowl, mix the liquid keto sweetener with a splash of the hot tea so it blends smoothly without grit.
- Remove tea bags and gently press them against the side of the pitcher to capture the last drops; do not wring to avoid bitterness.
- Stir in the dissolved sweetener, add 3 cups of cold water, lemon slices, and mint (if using). Add about 2 cups of ice to start chilling.
- In a separate cup, steep berry herbal tea bags in 1 cup hot water for 5–7 minutes until vivid ruby.
- Stir in 1 teaspoon liquid sweetener and lemon juice to taste while the berry tea is warm, then let cool.
- Let both base tea and berry infusion cool to room temperature, then refrigerate until cold, about 2 hours.
- Fill glasses with fresh ice, pour the base tea, then slowly drizzle a tablespoon or two of the berry tea to create a swirl.
- Garnish with a lemon wheel, mint sprig, or cucumber slices if desired.
- Taste and adjust sweetness or lemon at the glass; add a drop more sweetener or a squeeze of lemon if needed.
Notes
Store iced tea in a sealed pitcher in the refrigerator for up to 5 days. Keep lemon slices and herbs separate if storing longer than 24 hours to prevent bitterness. Store the berry swirl in a jar for up to 5 days. Serve over fresh ice; do not freeze. For a warm version, gently heat the base tea until just steaming and add fresh lemon after warming.
