Ingredients
- 1 cup natural creamy peanut butter — unsweetened, well-stirred
- 1/3 cup granulated allulose — or powdered erythritol/monk fruit blend
- 1/2 cup vanilla protein powder — whey or low-carb plant protein
- 1/2 cup finely milled almond flour
- 1 tbsp chia seeds — or ground flaxseed
- 1/3 cup unsweetened very fine shredded coconut
- 1 tsp pure vanilla extract
- 1/8 tsp fine sea salt — a generous pinch
- 2 tsp coconut oil or MCT oil — melted; use 1–2 tsp to adjust texture
- 1/4 cup mini sugar-free chocolate chips — or cacao nibs
- extra fine shredded coconut — for rolling
- crushed roasted peanuts — for rolling; unsalted or lightly salted
- 1–2 tsp almond milk or water — only if mixture is dry
Instructions
- Stir natural peanut butter until smooth and cohesive; microwave 10–15 seconds to loosen if needed.
- In a medium bowl, whisk protein powder, almond flour, chia or flax, sweetener, shredded coconut, and salt until evenly combined.
- Add peanut butter, vanilla, and 1–2 teaspoons melted coconut or MCT oil to the dry mix. Stir and fold until no dry streaks remain.
- If the mixture crumbles, add 1 teaspoon almond milk or water at a time. If too sticky to roll, dust in 1 tablespoon additional almond flour.
- Let the mixture sit for 5 minutes so the chia or flax hydrates and the dough firms up.
- Stir in mini sugar-free chocolate chips or cacao nibs, if using.
- Scoop with a small cookie scoop and roll into 1-inch balls between your palms.
- Roll some bites in extra fine shredded coconut or crushed roasted peanuts for texture.
- Place on a parchment-lined plate and chill 20–30 minutes until firm and springy to the touch.
- Enjoy immediately or transfer to an airtight container for the week.
Notes
Storage: Refrigerate in an airtight container up to 10 days, layering with parchment so bites don’t stick. For a firmer texture, store near the back of the fridge. Freeze on a sheet pan until solid, then transfer to a freezer bag for 2–3 months. Thaw at room temp 10–15 minutes. Optional: a 5-second microwave softens and makes chocolate flecks melty.
