Ingredients
- 2 large English cucumbers — cut into 1/2-inch rounds, patted dry
- 1 teaspoon extra-virgin olive oil — optional, for brushing
- 8 ounces cream cheese — softened; or whipped cream cheese
- 2 tablespoons fresh dill — finely minced, plus more for garnish
- 1 tablespoon lemon juice — freshly squeezed
- 1 teaspoon lemon zest
- 1/4 teaspoon kosher salt — to taste
- 1/4 teaspoon black pepper — freshly ground, to taste
- 1 tablespoon capers — drained and finely chopped, optional
- 6 ounces cold-smoked salmon (lox) — cut into thin ribbons
- 2 tablespoons chives — finely snipped, for garnish
- 1 tablespoon capers — rinsed and drained, for garnish, optional
- 1/2 teaspoon everything bagel seasoning or sesame seeds — optional, use lightly
- 1/8 teaspoon cayenne or prepared horseradish — optional, to taste
Instructions
- Cut cucumbers into 1/2-inch rounds; optionally scoop a shallow well with a melon baller. Pat thoroughly dry on both sides.
- In a bowl, combine softened cream cheese, lemon juice, lemon zest, minced dill, salt, and black pepper.
- Fold in finely chopped capers and a pinch of cayenne or a dot of horseradish if using. Adjust salt and lemon to taste.
- Whip with a fork or spatula until smooth and airy for easy spreading or piping.
- Lightly brush the tops of cucumber rounds with a tiny amount of olive oil for sheen (optional).
- Spread or pipe a dollop of the cream cheese mixture onto each cucumber round.
- Place a ribbon or small rosette of smoked salmon on each bite.
- Garnish with chives, a few capers, and a light sprinkle of everything bagel seasoning or sesame seeds.
- Crack fresh black pepper over the tray. Chill 15–20 minutes to help the cream cheese set if serving later.
- Arrange on a platter and serve cold as low carb smoked salmon cucumber bites.
Notes
Store assembled bites in a single layer in an airtight container for up to 24 hours; separate stacked layers with parchment to prevent sticking. For best texture, make the cream cheese mixture up to 3 days ahead, keep cucumbers and salmon chilled, and assemble 1–2 hours before serving.
