Ingredients

  • 2 bunches asparagus, medium-thick spearswoody ends trimmed; about 2 lb total
  • 12 slices bacon (regular cut)cut crosswise into thirds (36 short pieces)
  • 1 tablespoon olive oiljust to lightly gloss spears
  • 1 teaspoon kosher saltor to taste
  • 0.5 teaspoon black pepperfreshly ground
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprikaoptional, for color and subtle smoke
  • 1 teaspoon lemon zestfinely grated, to finish
  • 2 teaspoons balsamic reductionoptional drizzle
  • 2 tablespoons Parmesan, shaved or finely gratedor crumbled feta
  • 0.25 teaspoon red pepper flakesoptional, for heat

Instructions

  1. Preheat the oven to 425°F. Line a rimmed baking sheet with foil or parchment and set a wire rack on top if you have one.
  2. Rinse asparagus, pat completely dry, and snap or trim off the woody ends (about the bottom inch).
  3. Toss asparagus with olive oil, salt, black pepper, garlic powder, and smoked paprika (if using) until lightly glossy.
  4. Slice each bacon strip crosswise into thirds to make short pieces that wrap neatly around the spears.
  5. Bundle 2 to 3 asparagus pieces together and wrap with one short piece of bacon, overlapping slightly. Place seam side down on the rack (or directly on the lined sheet).
  6. Arrange bites with a little space between each so air can circulate for even crisping.
  7. Bake 15 to 18 minutes, until bacon is browned and crisp at the edges and asparagus is tender with a slight bite. If not using a rack, flip halfway through.
  8. For extra color, broil 30 to 60 seconds at the end, watching closely to prevent scorching.
  9. While hot, sprinkle with lemon zest and red pepper flakes, and drizzle with balsamic reduction or shave Parmesan over the top if desired. Serve immediately.
  10. Assemble bites up to 24 hours in advance, cover, and refrigerate. Bake straight from the fridge, adding 1 to 2 minutes if needed.
  11. Recrisp leftovers on a rack over a sheet pan at 375°F for 6 to 8 minutes, or air fry at 360°F for 3 to 4 minutes until hot and sizzling.

Notes

Cool completely, then refrigerate in an airtight container for up to 3 days. Reheat on a wire rack over a baking sheet at 375°F for 6–8 minutes or in an air fryer at 360°F for 3–4 minutes until hot and re-crisped. Avoid the microwave, which softens the bacon.
