Ingredients

  • 1.5 pounds asparagusmedium-thick spears, ends snapped off and patted very dry
  • 12 slices bacon (regular cut)not thick-cut

  • 0.5 teaspoon garlic powderor onion powder; optional

  • 1 teaspoon lemon zestplus wedges for serving
  • 2 tablespoons Parmesanfinely grated or shaved

Instructions

  1. Place a rimmed sheet pan on the center rack and preheat the oven to 425°F (220°C) so the pan gets hot.
  2. Rinse asparagus, snap off woody ends, and pat very dry with towels so the spears roast instead of steam.
  3. Toss asparagus with olive oil, a light sprinkle of kosher salt, and black pepper in a large bowl.
  4. Gather 3 to 5 spears per bundle and wrap each bundle with 1 slice of regular-cut bacon, starting near the tips and spiraling down; place seam side down.
  5. If bacon is slippery, secure each bundle with a toothpick through the overlap.
  6. Carefully oil the hot sheet pan lightly, arrange bundles with space between, and roast for 8 to 10 minutes.
  7. Flip bundles; if using, sprinkle garlic powder and smoked paprika so they bloom in the bacon fat.
  8. Continue roasting 7 to 10 minutes more until bacon is crisp and asparagus is tender-crisp; broil 1 to 2 minutes if needed for extra crispness.
  9. Transfer to a platter and rest 1 minute so bacon sets, then finish with lemon zest, Parmesan, or a light drizzle of balsamic reduction.
  10. Serve immediately while edges are crisp; pair with steak, chicken, salmon, or a simple salad.
  11. Air fry bundles in a preheated 375°F basket for 8 to 12 minutes, shaking or flipping halfway, until bacon is crisp and asparagus is tender.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on a sheet pan at 375°F for 6 to 10 minutes or in the air fryer at 360°F for 3 to 5 minutes until edges re-crisp. Avoid the microwave to keep bacon from turning rubbery. Assemble bundles up to 1 day ahead, cover, and chill; add 1 to 2 minutes to roast time if baking straight from cold.
