Instructions
- Add room-temperature unsalted butter to a mixing bowl and beat on medium until creamy, pale, and slightly fluffy, 1–2 minutes, scraping the bowl once.
- Sift the powdered sweetener and cocoa together to remove lumps and ensure a smooth, cloud-like texture.
- With the mixer on low, add the sifted sweetener-cocoa blend in 2–3 additions. Mix until the frosting turns glossy and begins to come together.
- Beat in vanilla and a pinch of salt. Drizzle in heavy cream 1 tablespoon at a time until the frosting is smooth and spreadable with soft ridges.
- For extra richness and a slightly firmer set, fold in melted sugar-free chocolate once cooled to lukewarm.
- Beat on medium for 30–60 seconds just until silky. Avoid overbeating to prevent a bubbly texture.
- Taste and adjust: add 1 tablespoon sweetener for more sweetness or 1 teaspoon cocoa for more depth. Adjust cream in 1/2-teaspoon dribbles as needed.
