Ingredients

  • 1 1/2 cups unsweetened almond milkvery cold
  • 1 teaspoon pure vanilla extractor 1/2 teaspoon vanilla paste
  • 1 pinch fine sea salt
  • 1-2 tablespoons zero-calorie granulated sweeteneror a few drops stevia/monk fruit, to taste
  • 1 cup frozen riced caulifloweror frozen zucchini; neutral flavor
  • 1 cup ice cubesadd more for thicker texture
  • 1 tablespoon almond butteror 2 tablespoons almond butter powder
  • 1 teaspoon chia seedsor ground flax; optional for extra thickness
  • 1 scoop vanilla or unflavored protein powderoptional; may reduce added sweetener
  • 1/4 cup canned coconut milkswap for part of the almond milk for richer texture
  • 1/4 teaspoon extra vanilla extractif your extract is mild
  • 2-3 frozen strawberriesoptional, gentle natural sweetness (not strictly sugar-free)

Instructions

  1. Pour cold unsweetened almond milk into the blender, then add vanilla, sweetener, and a pinch of sea salt.
  2. Add frozen riced cauliflower (or zucchini) and the ice on top of the liquids.
  3. Spoon in almond butter (or almond butter powder) and sprinkle in chia or ground flax if using.
  4. Add protein powder or swap in a bit of coconut milk if you want it richer; adjust sweetener if protein powder is sweetened.
  5. Blend on low for a few seconds to catch the ice, then increase to high and blend 45–60 seconds until glossy, airy, and smooth.
  6. Stop and taste. Add a splash more almond milk for lighter texture or an extra ice cube for thicker body; blend again briefly.
  7. If you used chia, let the smoothie sit 1 minute to bloom, then blend 5–10 seconds to finish smoothing.
  8. Pour into a chilled glass and enjoy immediately for maximum frosty, soft-serve vibes.

Notes

Refrigerate leftovers in an airtight jar for up to 24 hours; separation is normal—shake hard to recombine. For longer storage, freeze in silicone cups or ice cube trays and blend the cubes later with a splash of fresh almond milk until creamy again.
